Sinful Tropical Chocolate Chip Oatmeal Breakfast Bars

This is a yummy recipe I came up with while looking for a breakfast bar for my boys that were easy and healthy! These are so yummy and my boys eat them up so fast! I made a recipe last week and was commanded by the husband "you're gonna make more right". I wanted something easy for our rushed mornings before preschool and something my hubby could grab and go. They are a little messy so a bag is needed. My 10 month old loves to munch on these as well!!

Heat Oven to 350 degrees

Ingredients

3/4 cup of Brown sugar
1/2 cup of Sugar
1/4 cup butter
3/4 cup apple sauce or other puree -
             I have used butternut, sweet potato, carrot, and acorn squash as well
1 egg
3 TB milk-
           I have substituted Almond or soy milk for this and it came out fine!
2 tsp Vanilla
1 1/2 cup flour
           I usually substitute 1/2 cup of ground flax seed or 1/4 cup ground flax seed  and 1/4 cup wheat germ or soy flour.
1 tsp baking soda
2 cups oat meal- uncooked
1 cup coconut flakes
1 cup semi-sweet chocolate chips

Lightly grease a 9 x 13 inch pan

1. Beat together the sugars and butter.
2. Add applesauce, egg, Milk and vanilla
3. Add Flour and baking soda
4. Add oatmeal and coconut flakes
5. add chocolate chips

Spread ingredients in pan.
Cook for 25-30 minutes. Makes about 32 small bars.

Healthy substitutions:
If you want a healthier version you can omit the chocolate chips and add raisins, cranberries, dried apricots even. If you don't like coconut you can switch the coconut flakes to more oatmeal!
You can also add 1 tsp of cinnamon with the dried fruit version. You can see the other substitutions i have noted in the ingredients list as well.
